No-Bake Vegan Peanut Butter Powerballs
These easy-to-make, delicious vegan/plant-based snacks are a great boost of energy throughout the day. Easy to store, and oh-so-tasty, these are a perfect treat for a school lunch, or anybody on the go.

What better way to get a tasty, midday boost of energy than a powerball? These super simple, no-bake vegan powerballs are perfect for those on-the-go, for school lunches, and for quick breakfast.
With only four ingredients (you’ll probably have them in your cupboard right now!), these can be whipped up in absolutely no time, and they taste so damn good. From this recipe, you’ll get approximately 30 powerballs, that can be stored in the fridge, or if you want them to keep for longer, toss them in the freezer and pull them out the night before you need them.
So where does the energy come from? It’s all in the oats. They’re an incredible source of slow-release carbs (amongst other vital nutrients), meaning you’ll reap all of the goodness from those healthy carbs, including energy, throughout the day. Feeling peckish a couple hours after lunch? Grab a powerball, and you’ll be full until dinnertime. Throw a few in the kids lunch bag or even as a vegan after-school snack as healthy alternative to processed food, and I guarantee there’ll be smiles all round.
The secret to these amazing vegan powerballs is size - don’t make them too big! Around the size of a golf ball, maybe even a little smaller, is perfect. You’ll get a greater yield, and they’re so filling, you won’t need a ton.
I could hardly wait to try one after my girlfriend, Sarah, rolled them together, but take the time to let the cool in the fridge. They’re worth the wait.

Before we Get Started
Prep Time: 5 Minutes
Total Time: 35 Minutes
Ingredients
3 Cups of Oats
1 Cup of Peanut Butter
(Or nut butter of choice)
2/3 Cup Maple Syrup
(Or sweetener of Choice)
2/3 Cup of Dark Chocolate Chips
Method
Combine ingredients in a bowl with a small dash of salt, and mix about until fully incorporated.
Wrap the bowl in cling film or tin foil, and toss in the fridge for at least thirty minutes.
Pull from the fridge, and grab a small amount of the mixture. Roll in your hand until you have a golf-ball sized shape. Repeat for a total of ~30 powerballs.
These can be stored in the fridge, or keep them in the freezer and defrost a couple the night before!

Add some coconut!
Try crushing up some flax seeds or your favourite seed and throw them into the mixture for a great boost of fibre.
Melt down your dark chocolate (or vegan yogurt!), and dip the powerballs. Place on a baking tray (with a wire rack if you’ve got one!), and pop in the freezer for about 30 minutes to cool. Afterwards, toss them in the fridge to store.
