The BEST Vegan Greek Salad
This Vegan Greek Salad is so easy, and delicious, too! It has very few ingredients, so making sure the ingredients are great quality is so important. The better they are, the better your salad will be. Olives, tomatoes, cucumbers, tomatoes, and onions. That’s all it is. And it’s incredibly delicious.

Ingredients
1/2 Red Onion
1 Cucumber
3-4 Beefsteak Tomatoes (Large)
8 Manzanilla Olives
8 Kalamata Olives
2 tbsp. High-Quality, Extra Virgin Olive Oil
Oregano, to taste
Salt and Pepper, to taste
Recipe
Cut the top and bottom of your cucumber. Cut in half lengthways, then further into thin, semi-circle slices. Top and bottom your 1/2 red onion, remove the skin, and slice thinly as well. Cut off the top of your tomatoes, halve, then into thirds or quarters. Add to the bowl.
Add in your olives, your extra virgin olive oil, oregano, and salt and pepper, then toss. Taste, and adjust for seasoning.
