Vegan Strawberry & Cinnamon Apple Oatmeal
A warm, filling, and healthy breakfast that’ll keep you energized and sailing until lunchtime. Strawberry and apple are a winning combination in any dish, but work especially well in this one!

Introduction
Growing up, my brother and I always used to eat the Quaker Oats with those little dino eggs before school in the morning. Now, we’re a little bit more grown up, but I still eat oatmeal almost every morning.
A bowl of oats is a blank canvas - they’re so customizable. They can be sweet, or savoury. Try adding different fruits or different sugars and see what you like best.

Strawberry Banana Oatmeal
Peanut butter and Jam
Sweet Potato and Maple
Sounds strange, but trust me. Give it a try.
Coconut and Dark Chocolate
My favorite thing about oatmeal is that it keeps you full for so long. Oats are packed full with slow-release carbs, meaning that they slowly provide you with energy throughout the day, so you’ll stay sharp right through lunch time. If you find yourself running back to the fridge to grab snacks by 11 A.M., or barely making it to midday without your stomach growling, try grabbing a bowl of oatmeal tomorrow morning.
They’re a great way for any vegan or plant-based eater to get a huge amount of nutrition in the morning. They’re loaded with iron, pack some pretty serious protein, and have healthy carbs.
The secret to a great oatmeal is a dash of salt. It provides a great warmth and smoothness. Stir frequently, and add your favourite toppings.

Yield: 1-2 Bowls
Ingredients
1 cup of Water
1 cup of Dairy-Free Milk
1 cup Oats
1/2 Apple
Strawberries
Maple Syrup
Cinnamon
Brown Sugar
Pinch of Salt
Method
Add water and dairy-free milk to a pot, and bring to a simmer. Stir occasionally to keep milk from burning on the bottom.
If you want to make a larger quantity, simply use equal parts oatmeal, milk, and water. (Ex. 2 cups each, 3 cups each)
Add the oats, and stir to incorporate.
With the stem of the apple facing upwards, slice off the sides of the apple (known as “cheeking”). Cut as many or as few cheeks as you’d like into thin slices. Use your best judgement!
Cut off the leaves of the strawberries. As with the apple slices, add as few or as many as you’d like.
Stir the oatmeal, and take it off the heat when it reaches the consistency you like.
Add to a bowl, and top with apples and strawberries. Add 1 tbsp. of brown sugar, 1 tbsp of maple syrup, and sprinkle with cinnamon.
Note: A little cinnamon goes a long way.
Have a taste, and add brown sugar, cinnamon, or maple syrup as you see fit.
Spruce it Up
To take this recipe to the next level, try these ideas:
While your oatmeal is cooking, add your sliced apple to a pan with the cinnamon and brown sugar. Toss frequently to ensure they’re coated, and remove when golden brown.
The apple will soften up, and the brown sugar and cinnamon give a beautiful, warm flavour when they’ve been heated.
Add chocolate chips.
Substitute the strawberries with any of your favourite fruits.
Add a few drops of vanilla extract to turn this oatmeal into a “cinnamon apple pie with ice cream”.
